
Ceviche is a widely popular seafood dish in the coastal regions of the Americas, specifically South and Central America, and the Caribbean. Although most coastal nations around the world have their own version and name of ceviche, the most popular and growing dish is the citrus-marinated fresh fish recipes of Latin America.
As the Hispanic population in the U.S. grows, so does the demand for more Latin dishes. Around the world, specifically in the U.S., existing restaurants now incorporate their own versions of ceviche as a permanent appetizer or main course on their menus and entire restaurants (cevicherías or their more common cousins, tapas bars) are opening specializing in various ceviche recipes.
